Quinoa with veggies
Ingredients
Quinoa
Veggies (broccoli, cauliflower,carrots) 2 cups
Yogurt 1.5 cups
Buckwheat flour 2 tbsp
Sugar - 2 tsp
Jeera - 1 tsp
Ghee - 1 tbsp
Coriander powder - 1 tsp
Green chili - 1
Turmeric root & Ginger root - 1/2 inch each, grated
Salt
Method
1. Heat a vessel and add ghee, once it heats up, add jeera. Once jeera browns a few shades and becomes aromatic, add green chillies and the vegetables and saute it. Grate turmeric and ginger root.
2. Sprinkle a little water and cover it. Every few few minutes remove cover and stir it.
3. Once veggies are 80% done, add coriander powder, sugar and required salt.
4. Meanwhile mix buckwheat flour into yogurt and once it has smooth consistency add it to the cooking vegetables and let them cook together for few minutes.
5. You can time the cooking time depending on how "cooked" you want the vegetables to be.
6. Serve the vegetables with cooked quinoa and ghee (optional)
