THE HIGHER TASTE

Blueberry cake.

Ingredients.
2 cups all-purpose flour
3/4 cups sugar
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 cups vegetable oil
3/4 cup milk
1 teaspoon yogourt
2 cups fresh or frozen blueberries

Sugar Topping:
1/4 cup butter, room temperature
1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
In a medium bowl with a pastry blender or two knives. Cut butter into sugar, flour, and cinnamon until well blended.

Preparation.
Preheat oven to 375 degrees F. In a large bowl, combine flour, sugar, baking powder, salt, vegetable oil, milk, and yogourt. Fold in blueberries.
Pour into an ungreased 8-inch square baking dish. Sprinkle Sugar Topping onto top of cake batter. Bake, uncovered, 50 minutes or until a toothpick inserted in center comes out clean.
Makes 8 servings.
