Red Tomato cake.
Ingredients.
1/2 cup butter
1 cup sugar
1 cup red tomato (chopped)
1 tsp soda
2 cups flour
2 tsp powder
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1 cup chopped nuts
1 cup raisins, rehydrated and drained
Preparation.
Bake in either tube or loaf pan in moderate oven 50 to 60 minutes.
Cream butter and sugar
add sifted dry ingredients alternately with tomato/soda mixture
Stir in dry nuts and raisins
Bake at 350 in a prepared 9x13 pan for 30 to 40 minutes
Frost with cream cheeses frosting
