Eggplant cake.
Ingredients.
2 cups all purpose flour
4 tsp vanilla
4 tsp yogourt
1 cup of sour cream
1/4 cup vegetable oil
2 cups grated eggplant
1/2 tsp nutmeg
1/4 tsp cinnamon
1/8 tsp cloves
1/8 tsp salt
Preparation.
Oven set at 350. Combine all ingredients and beat at medium speed for 4 minutes. Pour into a greased tub or bundt pan. Bake for 50-55 minutes( do not under bake)
Cool for 15 minutes, then remove and cool. Sprinkle with confectioners sugar if desired.
