THE HIGHER TASTE

Lentil and Apricot Soup.

Ingredients.
1 cup red lentils
1teaspoon hing
1 teaspoon oil
4 1/3 cups water or vegetable broth
2 thin slices fresh ginger
1/2 teaspoon turmeric
1 teaspoon cummin seeds, ground
1 teaspoon coriander seeds, ground
Pinch of chilli powder or flakes, to taste
Handful of dried apricots
Lemon juice or lemon salt, to taste
Salt and black pepper
Chopped coriander, to garnish

Preparation.
Wash and drain lentils. Fry ginger with oil in a large saucepan . Add dry spices.

Add lentils, apricots and water or stock to pan, bring to the boil, then simmer for approximately 30-40 minutes.

Season to taste. Liquidize. Garnish with coriander when serving.
