Corn Soup.
Ingredients.
2 T butter
1 t fresh ginger root, minced
1 t hing
1/2 t turmeric
1/2 t chile powder
2 cups creamed corn (canned)
1/2 cup tofu, diced
1/2 cup soy milk
1 cup water
1/2 T soy sauce
1/2 t salt
1/2 t ground black pepper
Preparation.
Melt butter in a large saucepan over medium heat. Add ginger, hing and stir-fry for 1 minute. Add turmeric and chile powder. Mix well. Add corn and tofu. Mix well and continue to cook for 1 minute. Add water and milk. Continue to stir until soup comes to the boil. Lower heat and simmer for 5 minutes.
Remove from heat and serve hot.
